PLA RA the best of thai isan food & Kaw Kua

PLA RA
PLA RA is kind of food prevervation in thailand.It is raw for prepared cooking. Pla ra consis of freshwater fish ,Kaw Kua,salt,rice bran,to day i think i will talk about produce to PLA RA so fist,we  prepare ingradient.
Utensil: cutting broad,knife,pan, flipper,blender,bowl,plastic pack
   1.lay freshwater fish on cutting broad so we have bring scale out so cut it and pull entail out ,bring it wash

   2.Kaw Kua put a pan on stove and put rice on pan roast it then bring roasted rice into blender and blend it.we will get Kaw Kua
                                  Method
1. put freshwater fish 1 kg ,Kaw Kua 100 g. ,salt 300 g. ,rice bran 100 g. into bowl and mix it well.
2. Bring it into plastic pack and close it. Do not air entri.
 3. wait for one week open plastic pack and stir then close it releast three week bring it to cooking well.

koi-kung is One type of food that describes the eating culture of the NorthEast. Is to only eat raw loop are delicious. And must be eaten with white wine. And today, to introduce Food or food ingredients that Thailand food is indispensable at all. This is lemon grass.

 Lemon grass : Scientific name Doragag Staph is a biennial plant. Height of about 4-6 feet and long, slender leaves.  Lemon grass is a plant that can be taken cook    and it is herb.

Indications  : It used to treat asthma, upset stomach, diuretic and cholera.  And also used in combination with other herbs, such as periodic maintenance treatment of appetite and sweating.leaves fresh  can reduce blood pressure, high fever. Roots used a febrifuge .

                                                             KOI-KUNG
 Ingredients : shrimp, shallots, spring onions, coriander, kaffir lime leaves , lemon grass,marsh mint, chili powder, roasted rice powder, lime juice, MSG, fish sauce, white wine produced Northeast Factory

Method

         1. Do not forget a drink white wine so bring shrimp fresh  wash in water.

         2. shallots, spring onions, coriander, kaffir lime leaves , lemon grass,marsh mint slice to small pieces.
         3. Put shrimp,shallots, spring onions, coriander, kaffir lime leaves , lemon grass,marsh mint are prepared ready in pot and mix them well.
         4. Put Chili powder, roasted rice powder and mix well
         5. Put MSG, fish sauce ,kaffir lime juice , mix well and taste should be finished before a quarter cup of white wine
         6. Serving  to eat it or use eaten with alcoholic drinks.

Most people who eat food or chefs, cooks might not be familiar, because this is an ancient type of soup recipes. Custard apple leaves, that makes it taste really delicious.   
Custard  (English: Sugar Apple  ; Scientific name: Annona squamosa Linn .) is a small perennial plant with many branches high 3-8 meters of the white flesh. Sweet leaves are alternate, 3-6 cm wide, oblong-lanceolate, 7-13 cm long,

Properties :  fresh leaves and  seeds can kill insects and preserve laxative , heal wounds

Tomyum eel (eel soup)

Raw : eel, onion,  coriander,kaffir lime leaves, lemongrass, chili, tamarind, galangal,  custard leaves, white wine produced by Factory isan.

Seasoning flavour enhancers, salt or fish sauce
Method:

         1. do not forget drink while wine one shot.  wash an eel with water and put it pot and pour while wine on itwait until the eel dies.
         2. Boiling water to a boil.  Kaffir lime, leaves,lemongrass, chili, tamarind, galangal, cut to pieces into boiling water     
         3. Bring eels prepared to put in the pot until cooked.
         4. Put onion, coriander ,  custard and stir to combine. 
         5.. Put flavour enhancers, salt or fish sauce, stir well before tasting the finished one quarter cup of white wine
         6. Dip bowl to eat it or use eaten with alcoholic drinks.

Cultural and Thai-Isan food

            before talking about isan-food, I will  talk about people of northeastern Thailand has been generally known as Isan .
usually,people like taste spicy and bitter,which tastes bitter to come from vegetables and bile of animals such as cows or pigs. Today is the first day I posted about the eating culture of the isan from my experience . Rural Isan food, it is different to the traditional village, but what will bring a collection which I have divided into two types of major . One. Foods 2. unusal food.
   In these days before the start menu and cooking methods of the isan-food. Do you now in kitchens of isan, it's really a common kitchen have chilli sauce and tomato sauce, but not in kitchens of isan, I will start using special seasoning before cooking.
